Dear Woks, this was such a helpful post including the video. I am making ribs more frequently so I just loved all the advice. One little itty bitty tip for you (not that you need any help!) when I remove the membrane from the back of the ribs, I use a paper towel. I get a better grip. Love all your posts and book.
