Love your site! I tried this recipe and for some reason the fish really stuck to the pan, even though I made sure it was hot. I used haddock instead of cod. The corn starch also came off and got really sticky. Any tips for how to prevent this issue?

This worked a treat with salmon! Left out the cornstarch, as salmon is an oily fish and didn’t dry out.

In reply to Dave. You are so right, Dave, our current cost of living is so high. But just know that you can apply this method of cooking fish on any fish. Just some salt, Shaoxing wine and white pepper can make any fish taste good.
