I had some lamb shoulder chops in the freezer and had been trying to find a way to use them so this was perfect timing for us. We loved them. Cumin and lamb work so well together and the whole meal came together quickly which is always a good thing on a work night.

Thank you so much for this recipe – it’s going to become a regular around here.

These are beautiful Judy, I love lamb. Thing is, surprisingly, I find it hard to find a well cut shoulder chop round bone or other here in Chicago! They are always too thin, or not cut to hold together through the membrane. Sadly, the butcher shops are no longer what they were in my home city, but you’ve inspired me to look further. I also used to make a whole roast lamb shoulder, and would love to see your family’s take on that! Adore this website.

Totally with you on this, I love shoulder chops (pan-seared medium-rare, though). I never thought of using cumin, if anything I’d rub on some garlic, but I am absolutely using it next time I make them. Great idea.
Just one difference: I always use round-bone chops, rather than the blade chops you’ve chosen. They have several muscle sections that each have their own good points: a little eye, reminiscent of a rib chop, a cross-cut of the rib bones like miniature spare ribs, and a couple of other meaty parts that I can’t really describe properly. Plus, when you’ve finished all the meat, the round bone itself is like a little lamb osso bucco. Delicious spread on a piece of toast.
Now I want lamb chops for dinner, even though I have something else planned!
