In reply to Steve. Some fish sauce brands are made with krill in addition to fish, so I would find one that just has fish as an ingredient! Some kimchis also use shellfish, so watch for that! I imagine there are kosher kimchi brands available.

Super good. Afraid with the chopped kimchi (local and fresh), a tablespoon of gochujang, 2 of gochugaru, the kimchi noodle soup would be killer hot. But not at all.

Is there a way to make this kosher friendly?

I would use kosher meats instead of pork, of course.

Is the fish sauce made with shellfish? Is there a brand of fish sauce that is not made with shellfish?

Seafood or bunashimeji mushrooms have the common American name “𝐵𝑒𝑒𝑐ℎ 𝑚𝑢𝑠ℎ𝑟𝑜𝑜𝑚𝑠” because they are often found growing on fallen beech trees.
