Some fish sauce brands are made with krill in addition to fish, so I would find one that just has fish as an ingredient! Some kimchis also use shellfish, so watch for that! I imagine there are kosher kimchi brands available.

Super good. Afraid with the chopped kimchi (local and fresh), a tablespoon of gochujang, 2 of gochugaru, the kimchi noodle soup would be killer hot. But not at all.

I would use kosher meats instead of pork, of course.

Is the fish sauce made with shellfish? Is there a brand of fish sauce that is not made with shellfish?
