Hi Eve, the texture of the tofu and pressed tofu changes after being frozen. They turn very crumbly, so it’s not a good idea. We will be posting a pressed tofu recipe shortly, so you can make it yourself anytime you want by using firm tofu. ;-)

Hi Janet, this is a fairly common ingredient, so I’m surprised your local market doesn’t stock it. You could get it online from a fresh Chinese online grocer like sayweee.com, depending on whether you’re in their delivery zone.
