Included this as part of my Thanksgiving celebration & it was a shot-score! Everyone raved about how flavorful & tender the duck was. The leftovers were turned into duck noodle soup. Another shot-score!

Hi Emily, we picked Pekin duck because it is more meaty and has a milder, less gamey flavor. I’m not sure if a mallard duck would work.

We live in Montana and our local butchers do not carry Pekin ducks…do we need to order online, or do you think a local Mallard will suffice?

Got Cantonese Roast Duck #2 ready to go into the oven. Can’t wait.
Used my air compressor again and with 50+ psi it really inflates easily.

Bill, It’s Joe in the little cabin in Wyoming. And yesterday and tonight were Duck Day! Made this recipe and it was as awesome as I had hoped for! Thank you.
Used a proper air compressor set at about 40 psi. The duck politely inflated!

So tasty and complex but almost simple, too. Thanks a million for sharing this with all of us!

We’ll be making this again!
