This Lobster Yee Mein looks absolutely amazing! Love how you explained the history and how it’s now so popular in Cantonese restaurants. Hi Jane, there doesn’t seem to be a lot of reasonable choices online. You would look for efu or longevity noodles. Many of the packets also say “Fried Noodle” since these noodle have been deep fried. Best to go to a local grocery store if you can.

Hi Faye, For best results prepare as close as possible to cook time amd definitely within the day. If the lobster has cooled completely then you’ll have to use the wok cover and spread a tablespoon or two of water before covering to create some steam to heat the lobster through
