Hi Jeneanne, good job, you can use just about any mushroom for this dish. I am going to say that any stir fried vegetable dish is not going to freeze well. It’s always best to make stir fried veggie dishes fresh ;-)

Love the recipe! I made this last night and it was absolutely delicious! I could not find straw mushrooms in our small local area, so I used dried shitake mushrooms instead, then used the water that I rehydrated them in for the rice. I do have a question, though. Does this recipe freeze well?

Hello Bill and family,

I just wanted to say that when I’ve gone to local restaurants for Moo Goo Gai Pan, they’ve included Chinese Pancake wrappers. Now I’m finding out that this is actually Moo Shu, made with the additions of scrambled egg and cabbage. So I see now, Moo Goo Gai Pan is chicken and mushrooms (which I love) and not served with the wrappers.

As far as the wrappers go, one to-go restaurant was very disappointing in that they included obviously from package Mexican tortillas, which to me have a different texture and taste from the Chinese pancake.

I’ll be trying out your recipe above, and also looking on your site for Moo Shu with a pancake wrapper.
