I used mini sweet peppers here, Harold, but you could use red bell peppers, or even a mildly spicy red pepper like holland chilies, with the seeds removed.

This was just delicious! I added some green onions and ginger. Tossed a dried Serrano pepper from my garden into the sauce and let it marinate for about an hour in the fridge. Perfect touch of spice. I halved the recipe and served over some steamed rice, and have a bit leftover for lunch tomorrow. Thanks for sharing it with us.

Hi Ralph, if the patina is sort of black and thick to the point where it’s flaking off, then that’s actually not the patina at all, but just burnt residue on the bottom of the wok that you’d want to scrub off during cleaning. If you’re just seeing small scratches in the wok itself, it may be that the metal is just a bit on the softer side, and I wouldn’t worry too much about it. Just keep using it, washing it and drying it well, and you can oil it with a little oil and a clean paper towel after cleaning if you like.

Great recipe I make every week! Bought a stainless steel Chinese spatula. It’s scratching the patina built up on the bottom of the wok while deglazing it. What am I doing wrong?
