Hi Miriam, you definitely can cut the vegetables ahead of time and even pre-cook them but using all fresh raw veggies from the start yields the best results

Hi Laura, whether the greener stalks are stringy depends upon the celery stalks themselves, but some celery adds a nice flavor to the dish. The easiest way to eliminate the stringy portions is to hold the celery stalk with the green side down and bend the stalk downwards with both hands until the stalk breaks. Celery strands on the outside of the stalk will keep the pieces together, so just pull and you will be able to peel off the stringy strands. The leafy portions of the celery are edible but are usually a bit bitter. Happy cooking!

Oh, Bill, THANK YOU! I was just thinking about this dish yesterday. Over 50 years ago, I lived in San Jose, CA, and often went to a very nice Chinese restaurant in the area. I asked if the chef could make a “Moo Shu” – with tofu instead of meat. The waiter was shocked by the idea, but it was made and it was delicious. I called it “Moo Shu Tofu” – catchy, don’t you think? :) Can’t wait to make this dish using your recipe!
