Hi Andrea, you are right, oyster sauces all have sugar. What I would recommend is eliminating any added sugar and using oyster sauce. For the small amounts of oyster sauce most recipes require, hopefully that small amount of added sugar is tolerable.

Hi Barbara, you can try a wok ring to concentrate the heat for a round bottomed wok, which is what we used when growing up (we had both and electric and a gas stove) but the best solution is a flat bottomed wok.
