I’ve never gotten that feedback on this recipe, Brien! The sauce should just be clinging to the chicken and vegetables and not be pooling around/soupy. Did you by chance double the recipe? Increasing the amount of ingredients in the pan makes it harder for the heat of your stove to keep up, and liquid cooks off more slowly, which can lead to that soupy issue. Could also be that the stove wasn’t hot enough!

I’d recommend anyone making this to prep the sauce beforehand and just spoon in a couple of tablespoons at first so you don’t accidentally make soup. Just use any additional sauce for another batch.

Hi Hannah, hoisin is pretty different from oyster sauce. It’s sweeter and a different flavor. Maybe instead, try replacing the 1 tablespoon oyster sauce with 1 1/2 teaspoons hoisin sauce mixed with 1 1/2 teaspoons soy sauce. That will give you a better flavor balance.
